Protein Muffins
These are super easy to make and taste awesome! I don’t go too crazy on the “pre-recipe” dissertation (bc honestly I don’t have time and I’m the “jump to recipe” person) so if you have any questions on any of my recipes, just ask in the comment and if I will try to help. I will tell you that I have used several different types of protein in baking and I haven’t had any recipe turn out “bad” so far. So, use what you’ve got or if you’re looking for protein recommendations then I hope this helps. I made these vegan/gluten free/oil free but I will include substitutions for people who don’t need that.
1 cup mashed banana (2 banana)
1 flax egg (Or reg for non vegan.. by why would you wanna do that??? Haha)
4 tablespoons maple syrup (or, honey)
3 tablespoons apple sauce (or liquified and cooled coconut oil/butter/sub)
3/4 cup oat flour (gluten free) just grind up some oats into a powder. I used ZEGO protein oats.
1/2 cup @nuzest (orgain vegan works great, too) chocolate clean lean protein powder (Or, try other flavors! Chocolate PB, vanilla, coffee…. you get the point 🙂
1 teaspoon baking powder
1 teaspoon baking soda
Preheat oven to 350 and prepare a lined or greased muffin tin.
In a bowl, mash bananas until smooth. Stir in flax egg, maple, and apple sauce until combined.
Add in all remaining dry ingredients. Mix into a batter
Pour batter into cups. It filled 10 cups for me 3/4 to the top. Bake muffins for 12-15 minutes or until golden brown and a toothpick comes out clean when inserted in the center.
